Sauteed Chickpeas

- 1 cup/can cooked chickpeas
- 1 small red onion
- 1 bunch scallion
- 1 sprig thyme
- 3 cloves garlic
- 1 teaspoon parsley
- 1 tablespoon
Add your oil of choice to a frying pan over medium heat.
Add garlic, onion and scallion stems to the oil, stir continuously until fragrant.
Add chickpeas, optional spices, and a pinch of salt.
Leave unstirred for five minutes, stir and leave unstirred for another five minutes. Continue this process until the chickpeas are browned and crispy to your liking.
Serve immediately and enjoy!
