Rich in nutrients: This smoothie is made with fresh ingredients, you get a variety of vitamins and minerals from the dates, pecans, almond butter, pumpkin, and banana. My blueberry protein smoothie is also a nutrient-rich favorite.

Rich in beta-carotene (vitamin A) – may positively impact eye health.

Rich in soluble fiber- this may aid in weight loss because fiber keeps you fuller for longer plus pumpkins are low in calories.

High potassium content- this makes it a great addition to the diet of people with hypertension (high blood pressure).

May ease stomach disorders- having pumpkin puree with plant milk on a regular basis may help with heartburn or stomach ulcers.

Promote bowel movements– since pumpkins are high in soluble fiber, having pumpkins on a regular basis may prevent constipation.

Pumpkin puree- I recommend using homemade pumpkin puree because it tastes better and is free from preservatives.

Plant-based milk- I like to use high-protein plant milk like cashew milk, pea milk or soy milk. They tend to be creamier and will help round out the smoothie to make it a balanced meal(drink).

Pecans- pecans are classically paired with pumpkins for fall-inspired treats. You can use any nut you desire. Walnuts would be a good substitute nut.

Almond butter- contributes to the creaminess of the pumpkin smoothie and adds a depth of flavor.

Pitted dates- are used as a natural sweetener and they add a rich and unique flavor without overpowering the pumpkin or the spices.

Frozen banana- adding banana makes this smoothie extra smooth, lol. I used only half of a banana to prevent it from taking over the pumpkin spice flavor. You can make this with no banana.

Ground nutmeg, cinnamon, and ginger– classic warm spices that pair perfectly with sweet pumpkin dishes. You can include a pinch of cloves and allspice for a stronger pumpkin spice flavor. Or simply use a ready-made mix of pumpkin pie spice.

How to make this Vegan Pumpkin Smoothie with Fresh Ingredients

SOAK your nuts overnight or for an hour in boiling water to soften them.

ROAST your pumpkin, allow it to cool and then puree it.

BLEND all your ingredients in a high-powered blender for 1-2 minutes.

SERVE cool in your favorite smoothie glass.

How to add more protein in this smoothie

Add a scoop or two of protein powder

Increase the amount of nut butter (use two tablespoons instead of one)

Add a tablespoon or two of hemp seeds.

Instead of milk, you can use plain yogurt or Greek yogurt.

Can I make pumpkin puree without using baked/roasted pumpkin?

I recommend using roasted/baked pumpkin because the pumpkin develops a certain sweetness and deeper flavor that way. However, you can steam your pumpkin, using as little water as possible in the cooking process.

Ingredients

  • ¾ cup pumpkin puree
  • 1 cup plant-based milk
  • 2 tablespoons pecans
  • 1 tablespoon almond butter
  • 5 pitted dates
  • ½ frozen banana
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ½ teaspoon ground Saigon cinnamon
